Whole Wheat Banana Cake

Whole wheat banana cake with rolled oats for extra fiber We love banana cake. It would make a perfect sunday breakfast. Or brunch, or snack, or anytime. I always use a couple tablespoons of honey instead of sugar. I also substitute some of the flour with whole wheat flour for more fiber and texture.  Baked in mini muffin tin for handy snack This one is eggless. And yes, it's still resulting in a nice texture This is the modified recipe I often use: Whole Wheat Banana Cake By Cokelatia Ingredients: 1 cup all purpose flour 1/4 cup whole wheat flour 1 tsp baking soda 1/4 tsp salt 1/2 cup oil 2-4 tbsp honey (or to your taste) 2 eggs 1 cup mashed banana 1/4 - 1/2 cup rolled oats (optional) Methods: Combine flour, whole wheat flour, baking soda and salt. Set aside. Mix oil and honey using a balloon whisk. Add eggs, one by one. Mix in mashed banana. Fold in flour mixture, and then rolled oats, until just combine. Do not overmix.

Mango & Pineapple Pie, Step By Step

Make the pate brisee using your favorite recipe. This  or this one  have very detailed methods.  Mix up the filling: mango chunks, pineapple chunks, sugar to your liking, a little cornstarch, and freshly squeezed lemon juice. Pour into the base. Prepare the top crust. You could spare some time to make a lattice top if you like, or go simple like me: just make a hole in the center with a simple but cute shape. I choose star shape. Cover the pie carefully, seal the edge. Bake until golden and the filling is bubbling (this is why we need the hole). Ta-daaa! Now, enjoy! Warm or cold, marvelous. 

(Not As Usual) Pukis

Wonderful Banana Cake

Wonderful banana cake. For breakfast. Imagine the aroma that would fill your entire neighborhood when you bake it in the morning. Mmmmm. Mine didn't look as good as the original one though. I guess it's because of the sugar. I reduced the amount of sugar far, far below the original recipe. But the cake was sweet enough for us. And I didn't use a loaf pan, I used a longer pan so the cake turned up much lower.  But it fit my snack box perfectly! Banana Cake Recipe

Corn Dog Muffins

I love corn dogs! And I've been dying to make them at home. It took quite some time to finally found the affordable cornmeal on store. And these were what I tried to make first, corn dog muffins. They're not fried, they're baked. "But they're exactly like corn dogs!" the source stated. Well, not really. The fried ones are more delicious. Lemon Meringue Pie

It was not the first time I made this pie, and it wouldn't be the last. Pie crust, lemon custard, sugary-puffy meringue topping, what's not to love? It took quite some hours to make though. So many step to do before I could finally enjoy the result. It was so worth it :) The unbaked pie crust Baked crust + unbaked lemon custard I don't know why but the lemon custard was too runny. I got the same problem the last time I made this. I might have made mistake before, but this time I followed the recipe carefully and it still happened. I baked it for about an hour and it just wouldn't set. I went on anyway but needed an extra effort to spread the meringue on top the still-jiggling custard. I'll try another recipe next time. Cheese Potato Cake

Just a simple sponge cake with mashed potato and cheese mixed in the batter. Nice combination, especially when still warm. Next time I make this again I would double the potato and cheese for a more pronounced taste. Cheese Potato Cake Recipe

Cookie Monster

This post is dedicated to the Cookie Monster in us. First, our favorite chocolate chip cookie. With almonds. And premium dark chocolate. We would get crazy whenever the first batch of this cookie come out the oven. They would look like this. Melted. Yu~um! Second, grandma's chocolate cookie. Not my grandma, but the title is like that. This one is made of cocoa powder, and coated with sanding sugar. That's what makes them different.  I baked them in two batches. First batch was baked right after the dough is ready, and the second batch was baked the next day after spending a night in the fridge. They made different texture and appearance. The first batch resulted in well-risen, fluffier cookies The second batch were more flat, but gooey cookies I love the cracked and crispy crust but gooey interior Last, this is the kind of cookies that would be a perfect refreshment after batches of chocolatey sweets. Cooking Eggplant

Moussaka I used to know only two kinds of eggplant dishes : fried eggplant with ground chillies (balado) or with sweet soy sauce. Until one day I saw a photo of moussaka that really made me drool. Eggplant with cheese? I wondered what it taste like?  Not letting my curiosity occupied my thought for too long, I picked the best recipe I could find on the internet and made it. I didn't know if I made it right or not, I haven't tried the authentic moussaka. For me it was like another lasagna but with eggplant instead of pasta or bread :D Same mince and tomatoes,  same bechamel sauce. Well, still having some eggplant in the fridge I moved on to another recipe using eggplant: Ratatouille. I kinda like this one better. Eggplant and zucchini with tomatoes, so fresh and healthy. Martha Stewart's Double Chocolate Brownie

I had this recipe around for years and never willing to try it until today. It was delicious! Using both dark chocolate and good amount of cocoa powder makes it rich, very chocolatey. (What's Left Of) Juna's 3rd Birthday Cake

My son had turned three. After Balloons Banana Cake and Chocolate (again) Banana Cake , It was Carrot Cake With Cream Cheese Frosting this year. We threw a little afternoon tea party where my mom and I made most of the hors d'oeuvre. It was hectic hours before the party and I only managed to finish assembling the cake just a few minutes before the guests came. So the cake had minimalist decoration as always, but I completely forgot to take a picture :( Fortunately I made a very large cake so after the party there were still a quarter left for me to take photos :) Oh by the way, the cake was really good. It was very, very moist, didn't taste like carrot, and blended very well with the cream cheese frosting. I used full-colored chocolate-chips for the topping and they were perfectly matched. Bread Lasagna

Whenever I crave for lasagna but only got some bread in hand I use the bread instead of pasta. Have you done that? Try, it's pretty good. So the layers would be buttered bread - bolognese sauce - cheese sauce and repeat them as many as you like. I had some leftover cream soup so I made cheese sauce out of it - just add shredded cheese, a little thickener if needed, and warm them up until become sauce. Oh I also added some spinach between the bolognese and cheese sauce layers. What a lovely saturday morning breakfast.

Apple-Cornflakes Crumbles

On the previous cornflakes cookies making I made so many dough and froze them. After batches of cookies there were still some dough left in the freezer, so this is what I did: I pressed half the dough at the bottom of pie pan. Peeled an apple, sliced it. Mixed them with a little palm sugar, ground cinnamon, salt and lemon juice. Then arranged the slices on top the dough. Sprinkled the rest of the dough and baked them until browned. Voila, an apple pie! Or an apple-cornflakes crumble pie!

Cinnamon Raisin Toast

An easy morning / afternoon snack: Spread two pieces of wholemeal bread with butter. Beat an egg yolk, add some milk. Lightly moisten the bread with the egg mixture. Top the bread with raisins, sprinkle some ground cinnamon. Bake until lightly browned. Nom-nom!
